For the beef curry
- 2 lemongrass stalks
- 2 large red chillies, de-seeded and chopped
- 6 garlic cloves, roughly chopped
- 5 cm piece of ginger, roughly chopped
- 1 large onion, roughly chopped
- ¬? tsp ground ginger
- 1 tbsp ground coriander
- 1 tsp ground cumin
- 1 tsp freshly-ground black pepper
- 2 tbsp sunflower oil
- 2 cinnamon sticks
- 12 cloves
- 2 bay leaves
- 2 x 400g cans coconut milk
- 1.5 kg Irish braising steak, such as chuck or blade, cut into 5cm pieces
- 1 tsp salt
- walnut-sized piece of tamarind pulp
- 1 tbsp dark muscovado sugar

- steamed fragrant rice
