For the steaks
- Half a bottle of Shiraz red wine
- 1 garlic bulb
- 1 tbsp mixed peppercorns
- 1 tsp rosemary sprigs
- 1 tsp thyme sprigs
- 4 x 300 g Irish T-bone steaks
For the potatoes
- 12 new potatoes (even-sized and red skinned if possible)
- 3 tbsp olive oil
- ¼ tsp chopped fresh rosemary
- ¼ tsp chopped fresh thyme
- sea salt and freshly-ground black pepper
To serve
- lightly dressed spinach salad
